Ingredients
- 1 can (15oz.) black beans, drained and rinsed
- 1 can (15oz.) pinto beans, drained and rinsed
- 2 cans (10oz.) Original Rotel
- 1 can (4oz.) diced mild green chiles
- 1-1.5 c. frozen corn
- 3 c. vegetable broth
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 2 tsp. garlic powder
- 2 tsp. cumin
- 2 tsp. chili powder
- 3/4 c. quinoa, rinsed
Optional Toppings
- Avocado
- Mild cheddar cheese, shredded
- Tortilla Chips
- Sour Cream
Directions
Combine all ingredients in a Crock Pot. Cook on high for 3-4 hours or low for 6-8 hours.
